Stag's Hollow Simply Noir
A fruit forward, spicy red blend that is dominated by Gamay Noir. Pie cherries and red berry fruit with a dash of black pepper that lingers in the finish.
Hand picked, hand sorted, lots of Gamay Noir, Merlot and Pinot Noir were destemmed and whole berry fermented in small 1 ton open topped fermenters using selected yeast strains. The ferments were punched down 4-6 times daily by hand and then pressed directly into older French oak barrels. After malolactic fermentation the wines were aged for an additional 6 months on fine lees before being blended, lightly fined with egg whites, filtered and bottled.
Our Simply Noir blend showcases the wonderful characteristics of Gamay Noir with its bright cherry, red berry fruit and spicy notes of pepper on the finish.
