Tasting Notes
Medium depth red with purple tint. Attractive leafy aromas with nuances of mint and spice. Fresh red currant fruit and savory oak flavours with subtleties of mint and leaf supported by soft tannins.
Vineyard Notes
Excellent winter rains were recorded across all grape growing regions throughout South East Australia during winter prior to the 2011 growing season. Generally cool unseasonal weather with higher than average rainfall was observed throughout spring, providing excellent soil moisture profiles which promoted healthy vine canopy development without the necessity for supplementary irrigation. The summer months were similarly cool to mild with extensive rainfall across all regions of South Eastern Australia. In order to maintain fresh and clean fruit, the Cabernet Sauvignon and Merlot were harvested at ripeness levels slightly lower than in typical years thus creating a wine with more elegance and softness yet still retaining natural varietal characters.
Production Notes
Selected Cabernet Sauvignon and Merlot parcels of fruit were chosen to complement each other for this wine, with Cabernet Sauvignon selected on the basis of structure and length, Merlot to give fruit weight and softness across the mid palate. Fermentation took place for between 10 – 14 days with temperatures ranging from 18 - 28˚C. During fermentation, regular assessment of colour and tannin extraction ensured parcels were soft and fruit driven in style. Maturation of selected batches of the wines in older French oak hogsheads for up to 12 months added approachability and softness to the wines prior to blending.
