Desert Hills Un-Oaked Chardonnay
A dry, fruity wine with flavours of apple and pear which lends to pairing with seafood, chicken or light cheeses. Perfect for the patio!
The grapes from Sagebrush benefit from the hot Black Sage Bench days and provide the backbone of the wine, while the grapes from the much higher altitude NightHawk impart the crisp and aromatic notes recognized in our Chardonnay.
Grapes were hand harvested and hand sorted followed by a whole berry gravity “crush,” whereby free run juice had minimal skin contact. Fermentation temperature were maintained at 15 degrees to optimize flavours. Upon completion of fermentation, the wine was racked into stainless where it cold stabilized for two weeks, filtered, then bottled.
