2012 Stag's Hollow Heritage Block
A Bordeaux-style blend, it has the supple softness and fruit of Merlot, the lifted notes of bouquet that can only come from Cabernet Franc and a touch of Cabernet Sauvignon for added structure. The grapes were harvested at their peak and aged for 18 months in both French and American oak.
All lots of fruit were harvested separately, bunch sorted, destemmed and gravity transferred to 1 T fermenters. Approximately 50% of the berries were left whole and uncrushed. After a 48 hour cold soak, the must was warmed and inoculated with selected yeast culture. The cap was punched down by hand 3-6 time daily and at the ideal tannin extraction, the must was drained of free run juice and the skins were lightly pressed. The wine continued its alcohol fermentation in a combination of American and French oak through to dryness and then proceeded through Malolactic conversion prior to being racked and returned to barrel. It was left to mature undisturbed for 18 months before being blended and bottled without finning or filtration
At this point in time, the 2011 Heritage Block is showing dominate Cabernet Franc characteristics with the Merlot filling in the palate and the Cabernet Sauvignon providing the backbone structure of the wine. Drinkable on release but will only improve with careful cellar aging.
