Desert Hills Cabernet Merlot
Flavours of black currant and black cherry finished with smooth tannins.
Three Boys is our Estate Vineyard on the Black Sage Bench, where the east-west orientation and famous sandy soil provide for maximum sun exposure and great drainage. Leaf thinning also allowed for maximum sun exposure and ventilation in the fruit zone. High fruit selection accounts for yield of 3.5 tons per acre for both the Cabernet and Merlot grapes.
Cabernet and Merlot grapes were hand harvested and hand sorted and processed separately. For both wines, stemmed whole berries and free run juice were transferred to fermenting tanks for a five day cold soak, twice daily pump over to extract colour and flavour. Fermentation was maintained at a consistent 26 degrees for each wine. Upon completion of aging, wines were blended prior to bottling.
