WILD BOTANICAL GIN:
We use fresh botanicals, never dried which are wild from the mountains around the distillery. They are then placed in the still within hours of foraging. Each, sustainably foraged by one person our wild foodie, Geraldine Kavanagh. They are then slow-distilled to tease out delicate flavours by our obsessive stillman, Rowdy Rooney. Tiny batches, less than 250 litres with cut-points decided batch by batch, by smell and taste, never automatically.
Its story is being told through updated packaging including a smoked-oak glass bottle with labelling on aged parchment, all displayed in an Alder wooden box lined with Hessian and closed with solid brass fittings.
Slowly infused with Okanagan Cherries.
An inviting nose where vanilla and spice dances with bright sweet notes of Rum.
While being very approachable the influence of the rum cask and higher percentage alcohol creates a unique smooth, sweet, slightly woody marriage that sparkles on the tongue. A sweet spice finish complimented by woody undertones.
Notes of caramel and cinnamon!
A sherried release from Highland Park, Dark Origins is a combination of 80% first fill sherry casks (of which 60% is European oak and 20% American) and 20% refill sherry. A dark expression which fits in with the distillery's origins – founder Magnus Eunson being a smuggler who worked in the darkness of night.
Aged for 7 months. Soft, slightly oaky with hints of caramel and cocoa. It has a silky texture with a medium to long smooth finish.
